Position Summary

As the Assistant Manager - Stewarding, you play a vital role in ensuring the seamless operation of the hotel’s culinary and service teams by overseeing the cleanliness, hygiene, and organization of all kitchen and back-of-house areas. You will lead the stewarding team, ensuring compliance with luxury hotel standards, food safety regulations, and sustainability practices. In this hands-on leadership role, you will manage daily operations, coordinate equipment and inventory control, and collaborate closely with the Culinary, Food & Beverage, and Events teams to support exceptional guest experiences.


The Role

  • To plan the outlet weekly roster and work schedule to ensure that the outlet is adequately staffed to handle the level of business.
  • Oversees and manages the daily operations of the department and ensures that all team members comply with service standards, departmental policies and operating procedures set by the hotel.
  • Establishes measures and standard operating procedures for the correct usage and handling of chemicals for safety and cost saving purposes.
  • Monitors and conducts monthly inventory checks on all operating equipment and supplies.
  • Ensures that back-of-house cleaning schedules and garbage runs are strictly adhered to and areas are cleaned according to the established standards.
  • Review and submit reports to Chefs and Food & Beverage Office.
  • To attend and participate in the monthly Green Team meeting and to be primarily responsible for driving communication, awareness and engagement about recycling activities at Capella Sydney.
  • Handles all internal customer complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.
  • To ensure waste is disposed regularly in the correct manner.
  • To monitor all stewarding operations, especially during peak business periods, assisting and making adjustments where necessary.
  • To control stock and par levels in all areas responsible to the Stewarding department.


Talent Profile

  • General Education Certificate / Diploma.
  • Experiences in similar role at luxury hotels/resort.
  • Working knowledge of chemical and cleaning machinery is of advantage.
  • A hands-on approach and a passion for delivering world-class service behind the scenes.
  • HACPP knowledge /Food Safety Program knowledge.
  • Computer proficiency, including Microsoft Office Suite (Word, Excel).
  • Familiarity with Canva for creating training materials, team communications, or visual content would be advantageous.
  • Good command of written and spoken English.
  • Valid working rights in Australia.
