Position Summary
The Taqueria/Store Manager will manage the day-to-day running of the GYG restaurant to deliver on the GYG promise to create delicious food out of real ingredients, dominate the fast casual Mexican dining experience and deliver remarkable food and service experiences. They will manage, train and guide GYG staff, ensure that staffing and operational issues are resolved, and maintain high standards of presentation and customer service at their site.

- Plan and conduct Taqueria leadership meetings (i.e. Assistant Manager and Head Cook management meetings) and employee meetings as required.
- Maximise sales by identifying, implementing or executing actions to increase sales, and executing local area marketing as required by GYG.
- Manage rosters, workflows and staff resources to reflect trading patterns and operational requirements and achieve budget.
- Coach, train, support and nurture staff to achieve compliance, consistency, best practice and achievement of GYG food and service standards.
- Ensure that the required number of trained and certified crew members are available to effectively and efficiently operate the Taqueria.
- Ensure a safe and healthy environment for all, by training staff and 2IC’s, reporting and mitigating hazards, investigating, documenting and reporting incidents and, eliminating where possible any unsafe work practices and procedures.
- Ensure responsible service of Alcohol (RSA) and Responsible Person (RP) requirements and guidelines are complied with according to the applicable Liquor Licencing Act.
- Assist in the investigation and resolution of customer complaints within 24hrs.
- Complete daily and weekly reporting and documentation in accordance with GYG’s requirements, including responding to GYG Taqueria Standards Review (TSR) feedback and ensuring that issues are addressed to the Area Manager’s satisfaction, prior to the next GYG TSR.
- Implement and monitor food and cash controls.
- Maintain complete knowledge of Menu items and processes, basic ingredients and food procedures to provide information to customers and crew as required.
- Follow correct stock control procedures to ensure stock deliveries to ensure they are in line with orders and invoices, fresh stock is always on hand and maintained at the correct levels and weekly inventory procedures and end of week reports are completed.
- Update usage per thousand (UPT) every four (4) weeks and use this as the basis for assessing the stock needs weekly.
- Actively manage the Taqueria’s use, maintenance and repair of all equipment to minimise repair needs and extend the useable life of the equipment in accordance with GYG and Peregrine requirements and the manufactures guidelines.
- Monitor cleanliness and quality to ensure both the Store and its personnel always meet GYG’s and Peregrine’s presentation standards.
- Maintain Taqueria security to protect people and assets including updating of security codes.
- Control the store budget and provide accurate payroll information to the pay office in a timely manner.
- Any other duties as requested from time to time.
- Site staff turnover does not exceed 50%
- Overall productivity to equal $70-$80 per man hour
- Peak productivity to equal $100 per hour
- Mitigate labour when bad weather strikes
- Approved wage hours spend targets and average hourly rates in hiring and rostering must not be exceeded without prior approval
- Achieve maximum shrink of 2%
- Achieve sales index of 115
- Speed of service: 70% of all orders under 4 minutes
- Labour Percentage of Sales to be maintained at 35% inc. on costs
- Fix any issues raised regarding TSR or SIP within 24 hours
- Not to be marked for the same critical deviation in the one quarter, tracking changes with response within forty-eight (48) hours.
- Bench planning and succession plans are established for all positions.
- No breaches of the Alcohol (RSA) and Responsible Person (RP) requirements.
- GYG Franchise standards, Peregrine policies and procedures (including WHS) are complied with.
- Meet Cost of Goods Sold (COGs), Cost of Labour (COL) and Operating Costs targets as set by GYG and Peregrine.
- Successfully handling additional duties or requests with a flexible and solution-oriented mindset.
