Job Description
Step into a key leadership role where your creativity, precision, and flair for execution will shape unforgettable dining moments. As Chef de Cuisine – Banqueting at Hotel Chadstone Melbourne MGallery, you will take the reins of our banqueting kitchen and lead a team of passionate culinary professionals to deliver high-impact experiences across weddings, galas, conferences, and bespoke events.
In this role, you’ll be instrumental in upholding and evolving the culinary reputation of one of Melbourne’s most stylish luxury hotels.
You will:
Lead and oversee daily kitchen operations for our conference and event spaces, ensuring smooth service and exceptional food every time
Collaborate with the Executive Chef to design standout menus that reflect our luxury positioning and seasonal creativity
Mentor and motivate a high-performing team of chefs to consistently exceed guest expectations
Work hand-in-hand with our Events, F&B, and Sales teams to deliver seamless and memorable events from concept to plate
Monitor and manage food costs, supplier relationships, and kitchen efficiencies while maintaining uncompromising quality
Lend your expertise to other hotel dining outlets as needed, supporting collaboration and cross-outlet excellence

Qualifications
- Proven experience as a Chef de Cuisine or Senior Sous Chef in a luxury hotel or high-end catering environment.
- Strong leadership skills with the ability to lead a team to success through a caring and coaching approach
- Creative flair and passion for delivering exceptional culinary experiences.
- Excellent attention to detail
- Highly organised and can thrive in a fast-paced, high-pressure environment.
- Excellent knowledge and practise of food hygiene standards
- Certificate III or IV in Commercial Cookery
