What is the job?
The Chef de Partie will oversee food production in a kitchen section or restaurant outlet and assist the Sous Chef and Chef de Cuisine in the day-to-day culinary operations of that section or outlet whilst maintaining a clean and safe work area.
Your day to day
- Support the kitchen team and wider hotel team by communicating clearly and in a respectable manner to help create a positive and production kitchen environment
- Prepare batch recipes, cold food items and assist in all kitchen activities to ensure that guests receive high quality food items in a timely manner. Coordinate the smooth service and relation to the pass and pick-up of food.
- Responsible for HACCP compliance with regards to their section.
- Provide instructions to less experienced culinary team members. Check the methods of preparation, portion sizes, and timelessness of food preparation; control food usage to minimum waste
- Assist in the supervision of day-to-day operation of the kitchen as needed
- Promote teamwork and quality service through daily communication and coordination with other departments. Key departmental contacts include Sales and Marketing, Engineering and Guest Services.
- Assist in determining the minimum and maximum stocks of all food, material and equipment.
- May serve as Sous Chef in his/her absence as required.
- May assist with other duties as assigned.
What we need from you
- Communication skills - guests will need to come to you with concerns as well as compliments, so you’ll be easy to talk to
- Your problem-solving skills will turn issues into opportunities, so every guest leaves with great memories
- Fluency in the local language - extra language skills would be great, but not essential
- Reading and writing abilities are utilized often when giving and receiving instructions and preparing recipes.
- Fitness – you’ll be on your feet most of the day, and will need to bend and kneel a lot
- Flexibility - night, weekend and holiday shifts are all part of the job
- Experience – you will need a Certificate in Commercial Cookery and Apprenticeship (or equivalent) and a minimum two years’ experience after apprenticeship is acquired.
- Strength - sometimes you’ll need to lift, push and pull big objects up to 50lbs (23 kg). This can involve bending and kneeling
- Mathematical skills, including basic math, budgeting profit/loss concepts, percentages and variances are utilised frequently.
