Job Description
Set in the heart of Melbourne’s vibrant CBD, Oaks Melbourne on Market Hotel offers a premium experience for corporate travellers, leisure guests, and conference groups. We’re now looking for a talented and motivated Sous Chef to join our kitchen leadership team.
As Sous Chef, you’ll play a key role in leading our culinary operations, working closely with the Head Chef to deliver high-quality food across our restaurant, bar, room service, and conference & event spaces. If you’re passionate about food, thrive under pressure, and enjoy mentoring junior chefs—this is the role for you.
Key Responsibilities:
- Assist the Head Chef in overseeing daily kitchen operations
- Lead and support the kitchen team to maintain high standards of food preparation and presentation
- Ensure consistency, quality and portion control across all menu items
- Maintain food safety, hygiene and OH&S standards at all times
- Support in rostering, stock control and cost management
- Collaborate on menu development and seasonal updates
- Supervise kitchen operations during functions and events

Annual salary: $76,000-78,000 (excluding superannuation)
Expected hours: 38 per week
Location: Oaks Melbourne on Market Hotel - 60 Market St, Melbourne VIC 3000
Qualifications
- Proven experience as a Sous Chef
- Strong leadership and mentoring skills
- Experience in high-volume service, ideally in hotels or function venues
- Sound understanding of food safety and compliance standards
- Ability to work across a rotating roster, including nights and weekends
- Relevant culinary qualifications (Certificate III in Commercial Cookery or equivalent)
- Food Safety Supervisor Certificate (highly regarded)
