Position Overview
The Bar Manager is responsible for the smooth operation, profitability, and reputation of CU29’s bar. This role requires a skilled and motivated leader with a strong background in beverage management, mixology, and hospitality leadership. The Bar Manager will ensure that the bar delivers exceptional customer experiences, complies with all legal requirements, and upholds CU29’s premium standards of service.
Key Responsibilities
Operational Management
- Oversee all bar operations, including beverage preparation, service flow, and presentation.
- Develop, update, and maintain beverage menus, ensuring quality and creativity.
- Ensure bar readiness before service, including stock levels, cleanliness, and equipment functionality.
- Implement standard operating procedures to ensure efficiency and consistency.
Staff Leadership & Development
- Recruit, train, roster, and supervise bar staff, promoting skill development and high morale.
- Conduct performance evaluations and provide coaching to improve service delivery.
- Foster a professional, collaborative, and engaging work culture within the bar team.
Customer Experience & Service Excellence
- Maintain a visible presence during service to interact with guests, handle concerns, and enhance the bar experience.
- Monitor customer feedback to identify trends and implement service improvements.
- Promote signature drinks and pairings in collaboration with the restaurant team.
Financial & Inventory Control
- Manage bar budgets, cost of goods, and profitability targets.
- Oversee ordering, stock control, and supplier relationships to maintain optimal inventory levels.
- Track sales reports, monitor wastage, and implement cost-control measures.
Compliance & Safety
- Ensure adherence to Western Australia’s liquor licensing laws, RSA (Responsible Service of Alcohol) standards, and food safety requirements.
- Conduct regular safety checks, maintain hygiene standards, and oversee incident reporting.
- Train staff responsible for alcohol service and emergency procedures.
Marketing & Promotions
- Collaborate with the marketing team to develop seasonal promotions, events, and bar-related campaigns.
- Host or oversee special bar events, tastings, and product launches.
- Maintain strong relationships with suppliers for exclusive offerings and brand partnerships.

Qualifications & Experience
- Minimum 2–5 years’ experience in a senior bar or beverage management role, ideally in a premium or fine dining setting and in a high volume/marked–up venue.
- Proven expertise in cocktail creation, wine knowledge, and beverage pairings.
- Certificate IV in Hospitality or equivalent (preferred).
- Current Responsible Service of Alcohol (RSA) certification.
- Experience managing budgets, inventory, and supplier relationships.
