Who we are:
The Australian Agricultural Company (AACo) is Australia’s largest integrated cattle and beef producer, specialising in grass-fed, grain-fed, and Wagyu beef production. Established back in 1824, we’ve been doing this a while – in fact, we’re Australia’s oldest continuously operating company. We’ve had plenty of time to figure out how to be the best workplace we can be, with all the support, training, and opportunity you need to shape your career how you want to. We’re dedicated to acknowledging our history even as we look to sustainably feed the future – and we’d love you to join us.
Job Description
About the Role
We’re offering a hands-on, 6-month opportunity to kick-start your career in food product innovation as a Research & Development Officer (Maternity Leave Cover). You'll work closely with our friendly Innovation Team to help develop new value-added meat products and support projects involving ingredients, packaging, and product trials. It’s a great chance to gain real-world experience, whether you’re fresh out of uni or looking to get your foot in the door and learn from a passionate, experienced team.
Key Responsibilities:
- Support product development through bench-top, pilot, and on-site trials
- Assist with shelf-life testing, sample prep, data recording, and result analysis
- Contribute to research on ingredients, packaging, and formulation improvements
- Apply food science knowledge to solve technical challenges and innovate
- Collaborate across teams including QA, Marketing, and Operations
- Help prepare product documentation, samples, and internal project updates
- Stay curious and eager to learn in a supportive, growth-focused environment
Desired Skills and Experience
What we are looking for:
- Genuinely curious about food — how it’s made and how it can be better
- Eager to explore new ideas, especially using more of the carcass and keeping up with food trends
- A natural problem-solver who’s open to learning and taking on feedback
- Tertiary qualification in Food Science or a related field (Chemistry, Biology, etc.)
- Hands-on experience through uni, internships or food industry work is great (but not a dealbreaker)
- Some knowledge of food safety and formulation is a bonus
- Comfortable working in a practical, team-based setting
- Organised, clear communicator, and good at juggling tasks when things get busy
