Job Description

What you’ll do:
Reporting to the Executive Chef, you’ll play a key role in delivering exceptional culinary experiences across our diverse dining venues: Hamer’s Bar & Bistro, The Kitchen Café, and View 42. As Sous Chef, you’ll lead by example, support the kitchen team, and bring a warm, tailored approach to guest service. With a resilient and can-do attitude, you’ll help shape daily operations and elevate our food offering. On a daily basis you will:
- Support the Head Chef in daily kitchen operations, including food preparation and cooking.
- Oversee and train kitchen staff, ensuring compliance with food safety and sanitation standards.
- Collaborate on menu planning and daily specials, using seasonal ingredients and guest feedback.
- Monitor inventory levels, manage supply orders, and maintain accurate kitchen records.
- Ensure all dishes meet high standards of quality and presentation before service.
- Help manage kitchen costs and reduce waste through efficient preparation and inventory control.
- Manage team rosters in line with budget and the Hospitality Industry General Award (HIGA).
What you’ll bring:
- Significant (minimum 4 years) hands-on experience in kitchen operations with a clear understanding of the logistics of restaurants and functions catering
- Formal qualifications in commercial cookery or equivalent experience in a professional kitchen
- Experience in leading, coaching and mentoring a team while fostering a positive and productive work environment
- A passion for your trade and for creating and presenting contemporary dishes using local produce
- Excellent organisational abilities to manage multiple tasks and prioritise effectively in a fast-paced environment
- Demonstrated excellent customer service, interpersonal and communication skills
- Demonstrated computer literacy, particularly with common office applications
- DoFoodSafely Certificate of completion
- Flexible attitude to work hours over a 7-day roster, including weekends and public holidays
