Job Description
Position Overview:
The Chef de Partie is responsible for running a section of the kitchen and supporting the Executive Chef with daily food preparation, management, and maintaining culinary excellence for Cliveden Bar & Dining. This hands-on role requires strong technical skills, leadership, and a passion for delivering a luxurious dining experience in a fast-paced, high-standard hotel environment
Qualifications
Key Responsibilities:
Prepare, cook, and plate high-quality dishes according to menu guidelines
Oversee the mise-en-place, freshness, and readiness of assigned kitchen section
Consistently uphold standards for presentation, portioning, and quality of each dish
Supervise, mentor, and train junior kitchen staff
Coordinate with colleagues and other sections to ensure smooth service
Manage inventory, ordering, and stock rotation in assigned section
Practice and enforce outstanding hygiene, food safety (HACCP), and OH&S protocols
Foster a positive, professional, and harmonious team environment
Remain calm under pressure, especially during peak service periods
Support with menu development, innovation, and implementing changes when required.
Requirements:
Certificate III in Commercial Cookery (or equivalent)
Minimum 2–3 years experience as Chef de Partie or senior cook, ideally within a hotel/banquet/restaurant setting.
Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays
Hold appropriate work rights/work visa in Australia
Preferred Attributes:
Passion for learning and developing within the Accor brand
Strong communication and interpersonal skills
Proven experience working across different cooking styles and preparation techniques
Previous experience in banquet, à la carte, or multi-section hotel environments
Food Safety certification (desirable)
Experience running a section and supporting a busy, multi-outlet operation
Excellent technical cooking skills and an eye for detail
Proven leadership and staff supervision abilities; ability to inspire and develop a team
Commitment to quality, consistency, and high presentation standards
Working knowledge of food safety, kitchen hygiene, and OH&S
Flexibility to work split shifts, evenings, weekends, and public holidays
Exceptional time management and organisational skills
Ability to remain composed in a fast-paced environment
